Food Safety Training

The law requires that all food handlers need to be trained according to their food handling work activities. Should an employee achieve an HABC Food Safety qualification, which is suitable for the work they do, it will assist food business operators in proving that they have displayed due diligence and are therefore compliant in the eyes of the law.

On obtaining an HABC food safety qualification, employees who handle food will gain a firm grasp of the importance of food safety and knowledge of the systems, techniques and procedures involved. Furthermore, they will have the confidence and expertise to deliver quality food safely to customers.

The HABC Food Safety qualifications are intended for anyone working in catering, hospitality or manufacturing settings where food is prepared, cooked, served or produced. Typical environments may include pubs, hotels, restaurants, retail, factories, contract catering, fast-food outlets, hospitals, care and nursing homes, schools, prisons and the armed forces.

Level 1 Award in Food Safety in Catering (RQF)

The HABC Level 1 Award in Food Safety in Catering is a National Award written and accredited by HABC.

Who needs this qualification?

This qualification is intended for learners working in catering and those who are preparing to work in the industry. Learners gaining this qualification will know that food safety is the responsibility of everyone involved in the storage, preparation, cooking service and handling of food.

The subjects covered are regarded by the Foods Standards Agency as being important to ensure good practice and the production of safe food.

Subjects covered include:

  • an awareness of hazards and controls associated with food in catering operations
  • contamination prevention
  • temperature abuse of food and the importance of thorough cooking and rapid cooling
  • personal hygiene
  • cleaning and disinfection

The HABC Level 1 Award in Food Safety in Catering is recognised internationally and has been developed to protect customers, brand reputation and profits.

Learners must be at least 14 years old prior to certification.

How long will it take me to achieve this qualification?

This qualification is usually achieved by taking a half-day classroom based course.

How is the qualification assessed?

This qualification is assessed through a multiple choice question paper.

Level 1 Award in Food Safety in Retail (RQF)

The HABC Level 1 Award in Food Safety for Retail is a National Award written and accredited by HABC.

Who needs this qualification?

The Level 1 Award in Food Safety for Retail is a qualification intended for learners working in food retailing and those who are preparing to work in the industry. Learners gaining this qualification will know that food safety is the responsibility of everyone involved in the storage, preparation, processing, packing and handling of food.

The subjects covered are regarded by the Foods Standards Agency as being important to ensure good practice and the production of safe food.

This qualification covers:

  • the importance of food safety
  • an awareness of food safety hazards and how they can be prevented
  • the importance of personal hygiene
  • the importance of cleaning and disinfection

The Level 2 Award in Food Safety in Catering has been accredited by the regulators. It is supported by People1st and the Sector Skills Council for the Hospitality Industry.

Who needs this qualification?

This qualification is aimed at caterers and other food handlers. The qualification is intended for learners already working in catering and those who are preparing to work in the industry.

Subjects covered include:

  • hazards and controls
  • food safety management and temperature controls
  • food poisoning controls
  • personal hygiene
  • cleaning and disinfection
  • food pests
  • the role of the food handler in keeping food safe

The HABC Level 2 Award in Food Safety in Catering is accredited and recognised internationally and has been developed to protect customers, brand reputation and profits.

Learners must be at least 14 years old prior to certification.

How long will it take me to achieve this qualification?

This qualification is usually achieved by taking a one day classroom based course.

How is the qualification assessed?

This qualification is assessed through a multiple choice or open response question paper.

Level 2 Award in Food Safety in Retail (RQF)

The Level 2 Award in Food Safety in Retail has been accredited by the regulators. It is supported by Skillsmart Retail and the Sector Skills Council for the Retail Industry.

Who needs this qualification?

This qualification is ideal for anyone working in the retail industry, or those about to start work in the retail industry, where dealing with food is a part of their role.

Subjects covered include:

  • food safety hazards
  • food poisoning control
  • temperature controls
  • personal hygiene
  • cleaning and disinfection
  • the role of the food handler in keeping food safe

The HABC Level 2 Award in Food Safety for Retail (QCF) is accredited and recognised internationally and has been developed to protect customers, brand reputation and profits.

Learners must be at least 16 years old prior to certification.

How long will it take me to achieve this qualification?

This qualification is usually achieved by taking a one day classroom based course.

How is the qualification assessed?

This qualification is assessed through a multiple choice question paper.

Level 2 Award in Healthy Food and Special Diets (RQF)

Who is this qualification for?

This qualification will benefit anyone who prepares and serves food as it is designed to provide a basic understanding of nutrition and the requirements of special diets to enable the planning of well-balanced meals that have a positive impact on health. This could include chefs, kitchen porters, waiting staff, health care workers and childminders.

How long will it take me to achieve this qualification?

To complete this qualification learners should expect to undertake approximately 5 hours of learning.

Topics Covered

Learners will outline:

  • current nutritional guidelines for a healthy diet
  • describe the impact diet has on health
  • describe food preparation techniques that maintain the nutrional value of food
  • understand how to plan and provide meals for those with special diets (including medical needs, allergies, vegans, vegetarians and diets for different faiths).

How is the qualification assessed?

This qualification is assessed by a mulitple-choice examination that is available in both paper-based or e-assessment format.
